Oysters, mussels, clams
* Westcott Bay European Flat or "Belon" (Ostrea edulis ) - an elegant oyster native to France, Holland, and the British Isles. The Westcott European has a complex flavor with a distinct sweetness.
* Westcott Bay Petite (Crassostrea gigas )- a Pacific hybrid- a cross between the Miyagi from Central Honshu and the delicious, tiny Kumamoto from Kyushu. It is rich, sweet, and mildly salty.
* Westcott Bay Manila Clam (Tapes japonica )- a native of Japan; a steamer clam famed for its sweetness, produced in our hatchery, and planted on the beach.
* New - Westcott Bay Mediterranean Mussels
Shellfish aquaculture farm. Products grown exclusively in Westcott Bay. On the shoreline of San Juan Island near the Canadian border, the productive bay is enriched by the clean, cold waters of the Straits of Juan de Fuca.
Westcott Bay combines advanced aquaculture systems, prime site location, and a production team focused on excellence.
The shellfish are spawned in the Westcott Bay hatchery and cultivated in lantern nets suspended in deep water for optimal growth and safety. The harvested shellfish are cleaned to table-ready condition, chilled and hand-packed for both safety and quality of product.
The Washington State Health Department tests the shellfish each week for PSP (Red Tide) and Domoic Acid. It tests the growing waters bimonthly. The company's marine biologists test the water weekly.
